Immersion Brewing
French press, AeroPress, and Clever Dripper — full-immersion coffee brewing.
In immersion brewing, coffee grounds steep in water for a set amount of time before being separated. This produces a fuller body and more even extraction than percolation methods.
French Press
The French press is the classic immersion brewer. Metal mesh filter means oils pass through, contributing to a thick, full-bodied cup.
Recipe
- Ratio
- 1:15
- Temperature
- 94°C
- Grind
- coarse
- Total Time
- 4:00
Technique
- Preheat the press with hot water, discard
- Add coarse ground coffee
- Pour all water at once, stir gently
- Place the lid on (don't press yet), steep for 4 minutes
- Press slowly and pour immediately — don't let it sit or it will over-extract
For a cleaner cup, let the press sit for 5 minutes after plunging to let sediment settle, then pour gently.
Common Issues
| Problem | Cause | Fix |
|---|---|---|
| Gritty sediment | Grind too fine | Go coarser |
| Weak, watery | Too little coffee or short steep | Adjust dose or time |
| Bitter | Over-extraction, grind too fine | Coarser grind, pour immediately |
AeroPress
The AeroPress is the most versatile brewer ever made. It uses air pressure to push water through coffee, producing a concentrated, clean cup in under 3 minutes.
Recipe
- Ratio
- 1:12
- Temperature
- 85–95°C
- Grind
- medium-fine
- Total Time
- 2:00–3:00
Standard Method
- Place filter in cap, rinse it, attach to chamber
- Add ground coffee (inverted or standard orientation)
- Pour water to target weight, stir once
- Steep 1–2 minutes
- Press slowly over 30–45 seconds
The AeroPress World Championship has produced hundreds of radically different winning recipes. Experiment freely — there's no wrong answer.
Inverted vs. Standard
- Standard: risk of early drip-through; faster
- Inverted: no drip-through, more control over steep time
Clever Dripper
The Clever Dripper combines the clarity of paper filtration with the control of full immersion. It only flows when placed on a cup, giving you an immersion steep with a filter's clean finish.
Recipe
- Ratio
- 1:15
- Temperature
- 93°C
- Grind
- medium
- Total Time
- 3:30–4:00
Why the Clever Dripper
It's the most hands-off of the immersion brewers:
- Add filter, rinse, add coffee
- Pour all water, place lid, steep for 3 minutes
- Set on cup — gravity opens the valve
- Drain completes in ~45 seconds
